Lemon Strawberry Overnight Oats

It’s perfect to start your day with a protein, fiber and nutrient dense breakfast that also contains healthy fats, loads of vitamins and plant compounds and is really filling.
Making a gorgeous cheescake topping with cashews is also super easy, and you get a beautiful creamy refreshing mixture.
Vegan Lemon Strawberry Cheesecake Overnight Oats

Ingredients
Oats Mix
- 1/3 Cup Oats GF if you need to
- 1/4 Cup Almond Milk or other plant based milk
- 2 tbsp Vanilla Yoghurt Plant Based
- 1 tbsp Chia Seeds
- 1/4 tsp Cinnamon
Lemon Strawberry Cheesecake Topping
- 1 Cup Cashews Soaked for at least 15 minutes in warm water (or soaked for a couple hours if you have time)
- 3 tbsp Coconut cream taken off the top of canned coconut cream
- 1/4 Cup Maple syrup
- 1/2 tsp Vanilla Essence
- 1/2 Lemon juiced
- 1/2 Lemon zest
- 1/2 Cup Strawberries Fresh or frozen
Instructions
Oats Mix
- In your overnight oat vessel (jar, cup, or bowl etc), add all the ingredients and stir until all ingredients are well combined.
- Set in the fridge whilst you make your cheesecake topping
Lemon Strawberry Cheesecake Topping
- Place your 1 cup of cashews in a bowl and cover with warm water. Let them soak, covered in water for at least 15 minutes, or longer if you have the time.
- Drain your soaked cashews, and along with your coconut cream, maple syrup, vanilla extract, lemon juice & zest and strawberries to your food processor (or blender), and blend until a gorgeous smooth consistency develops – this only take a few minutes.
- Add the cheesecake topping to your oat mix and set in the fridge for it's overnight stay!
In The Morning
- Take your overnight cheesecake oats out of the fridge, add your toppings of choice and get ready to enjoy your healthy, raw, fruity, lemony, no bake, satisfying breakfast.
Notes
- I used a can of full-fat coconut cream and scooped 3 tablespoons off the top
- If you're not a strawberry fan, you can easily adapt the recipe using blueberries, cherries, mango etc. The choice is yours ♥
