I love Mexican food and all the flavours that it brings to the table. We have our version of taco Tuesday and it usually looks a lot like this Mexican Bean board. It’s an easy, healthy family favourite and perfect for the kids to explore what they like best in their tortilla’s.

Ingredients
- 1 can 4 Bean Mix Organic
- 1 can Tomatoes Organic diced
- 1 can Corn Kernels
- 1 tspn Cumin ground or
- 1 tspn Smoked Paprika
- 1 tspn Coriander ground
- 1 tspn Oregano
- 2 cloves Garlic crushed
- Salt and Pepper Generous grind of each
Instructions
- Add the garlic to a saucepan and saute for a minute
- Add in the rest of the ingredients and stir. Let simmer for 8 to 10 minutes, allowing the flavours to infuse.
- Remove from the stove top and enjoy as part of a tortilla meal, burrito bowl, dip or even on a sandwich.

- You could easily swap the 4 bean organic mix for beans of your choice.
